Nowadays, food and beverages industry in Hidalgo is integrated by products like: coffee, malt, honey, jelly, hot sauces, soda, raw materials for bakeries, sausages, snacks and milk and dairy products (cheese, cream, yoghurt, ice cream).

Recently, some companies have been taking advantage of non-traditional harvest to elaborate novelty products such as “xoconostle” (a kind of prickly pear), products obtained from amaranth, “agave” nectar, etc. Other companies are giving an added value to traditional Hidalgo’s gastronomy in order to get a manufactured product that can be commercialized but still new, like “barbacoa”, “pulque”, “pastes”, etc.

It is important to mention that Hidalgo is the main producer of barley, used to produce beer, one of the principal Mexican exported drinks.
